  • 1 (8 oz) center-cut beef filet
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup mushrooms, finely chopped (preferably cremini or button)
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 3 slices prosciutto
  • 1 sheet puff pastry
  • 1 egg yolk (for egg wash)
  • Salt and pepper to taste

Instructions

Step 1. Sear the Beef:
Sear seasoned filet in hot pan with oil, 1–2 minutes per side. Rest and brush with Dijon while warm.

Step 2. Prepare the Mushroom Duxelles:
Finely chop mushrooms. Sauté garlic and thyme in butter. Add mushrooms and cook until dry. Cool completely.

Step 3. Wrap with Prosciutto:
Layer prosciutto on plastic wrap. Spread mushroom mixture. Place beef on top and roll tightly. Chill 15 minutes.

Step 4. Wrap with Puff Pastry:
Roll pastry. Remove plastic wrap. Wrap beef in pastry, seal with egg wash, and brush top with yolk.

Step 5. Bake to Perfection:
Bake Wellington at 400°F for 15–20 minutes. Rest for 5 minutes before slicing into buttery layers.
